Ingredients
- 1/2 cup fresh bread crumbs
- 1 Tbs paprika
- 2 tsp fennel seed
- 1/2 tsp celery seeds
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp garlic powder
- freshly ground pepper
- 4 (1/4#) bonless pork loin chops, trimmed of fat
- 1/2 cup low-fat buttermilk

Step 1
Preheat the oven to 500. Spray a large rimmed baking sheet with nonstick spray.
Combine the bread crumbs, paprika, fennel seeds, celery seeds, onion powder, salt, garlic powder and pepper on a piece of wax paper; set aside.
Place the pork chops between sheets of wax paper. Pound them to 1/4" thickness using the smooth side of a meat mallet or the bottom of a heavy large saucepan.
Place the buttermilk in a shallow bowl. Dip the chops in the butteermilk, then coat both sides with the bread crumb mixture. Place the chops on the prepared baking sheet and put in the preheated oven. Bake until browned and cooked through, about 12 minutes.
Serve with a quick skillet saute of sliced zucchini and yellow bell pepper strips.
