  • Topping:
  • 1-1/2 cups all purpose flour
  • 3/4 cup sugar
  • 4 tablespoons butter
  • 1 teaspoon vanilla
  • Filling:
  • 2/3 cups all purpose flour
  • 1-3/4 cups sugar
  • 1/4 teaspoon cinnamon
  • 5 eggs
  • 1 teaspoon vanilla
  • 2 cups milk
  • 1/2 cup heavy cream
  • Butter for greasing dish
  • 4 cups peaches peeled and cut into 1/4" wedges
  • 2 cups blackberries rinsed
  • 2 cups heavy cream optional
  • 2 tablespoons powdered sugar optional

Preparation

Step 1

For topping combine flour and sugar. Cut in butter until the mixture resembles coarse meal. Add the vanilla, mix thoroughly and set aside. Preheat oven to 375 degrees.

For filling combine flour, sugar, cinnamon, eggs, vanilla, milk and cream in blender or food processor. Blend until smooth 15-20 seconds. Lightly butter 13" x 9" baking dish. Line dish with peaches and berries. Carefully pour custard filling over fruit and bake 30 minutes. Sprinkle topping over cobbler and bake 15-20 minutes longer, until topping is brown and knife inserted in center comes out clean. Serve warm. Sweeten heavy cream with confectioners sugar and serve on side.
