Ingredients
- 1 cup vanilla wafers
- 1/4 ¼ cup margarine (melted)
- 13/4 cup mincemeat
- 4 cups mini marshmallows
- 1/3 cup orange juice
- 16 oz cream cheese (softened)
- 2 tsp grated orange rind
- 1/2 ½ pint whipping cream (whipped)

Step 1
Press the first 2 ingredients into a 9” spring form pan. Chill. Spread mincemeat over crust.
Melt marshmallows with orange juice in double boiler. Stir until orange smooth. Chill until thickened. Combine cream cheese & orange rind, beating until well blended & creamy. Whip in marshmallow mixture & fold in whipped cream. Pour over mincemeat. Again chill until firm. Garnish with additional mincemeat & for a festive touch, add a wreath shape made of chopped candied fruit.
