Step 1
1. Coat chicken with cooking spray; sprinkle with black pepper and salt.
2. Heat oil in a large nonstick skillet, over medium-high heat. Add chicken, and cook 4 minutes on each side or until browned. Stir in pasta sauce, wine, and bell pepper stir-fry. Bring to a boil; cover, reduce heat, and simmer 10 minutes or until chicken is done. Yield: 4 servings (serving size: 2 chicken thighs and about 1 cup sauce mixture).
