Ingredients
- 3 strips diced bacon
- 1 medium onion, diced
- 1 celery stalk, diced
- 1 medium carrot, grated
- 11/2 lbs lean ground beef
- 1 clove garlic
- 6 cups diced green or savoy cabbage
- 2 28oz tins diced tomato
- 3 cups sodium reduced chicken stock/broth
- 1/4 cup cider vinegar
- 2 tbsp. prepared horseradish
- 1 tbsp sweet paprika
- 2 tsp celery salt
- 2 bay leaves
- 1/2 cup long grain rice
- to taste salt and pepper
- garnish sour cream

Step 1
Cook diced bacon in heavy bottomed soup pot until crisp. Remove bacon, leaving 2 tbsp grease in pot. Add celery, carrot and onion and saute until onion is translucent about 5 mins. Stir in the ground beef, cook until brown and then add the garlic and cook for a few minutes. Stir in the cabbage, tomatoes, chicken stock, cider vinegar, horseradish, paprika, bay leaves and rice. Bring to a stong simmer and then turn down to low simmer for 40 minutes or until the rice is cooked through. Add salt and pepper to taste. Stir in bacon before serving, use sour cream for garnish. Even better left to simmer all day on very low temp or the next day. If it gets to thick add more chicken stock or water.
Makes about 10, 1 cup servings
