  • 2 cups flour
  • 2 tsps. baking powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup buttermilk
  • 1 egg(slightly beaten)
  • 1/4 cup olive oil
  • 3/4 cup crumbled feta cheese
  • 1/2 cup chopped roasted red sweet pepper, drained
  • 3 tbsps. fresh snipped basil



Step 1

Preheat oven to 375 degrees. Line 12 muffin cups, set aside. In a bowl, combine flour, baking powder,salt, and baking soda. Make a well in the center of flour mixture; set aside. In another bowl, combine buttermilk, egg, and olive oil. Add egg mixture all at once to the flour mixture. Stir just until moistened-batter will be lumpy, gently fold in cheese, roasted red pepper, and basil.
spoon batter into the muffin papers, filling each 2/3 full. Bake for 18 to 20 minutes.
