Ingredients

  • 3 medium red potatoes
  • 2 c water
  • 1 small onion
  • 3 tbsp butter
  • 3 tbsp flour
  • crushed red pepper flakes
  • ground pepper
  • 3 c milk
  • 1/2 tsp sugar
  • 1 c shredded cheddar cheese
  • 1 c cubed cooked ham

Preparation

Step 1

Peel potatoes & cut into 1 inch cubes

Bring water to a boil, add potatoes & cook until tender, drain, reserving liquid. set potatoes aside. measure 1 cup cooking liquid, adding water if necessary, set aside

Peel & finely chop onion, melt butter, add onion stirring frequently, until onion is tender

Add flour to onion, season w/pepper flakes & black pepper to taste, cook 3- minutes

Gradually add potatoes, reserved 1 cup liquid, milk & sugar to onion mixture, stir well, add cheese & ham. simmer low for 30 minutes.
