Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 cup Blue Bonnet®-stick butter(1 cup = 2 sticks)
  • 1 cup Peter Pan® Creamy Peanut Butter
  • 1 cup firmly packed brown sugar
  • 1 pkg (3.4 oz each) French vanilla instant pudding mix
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cup salted peanuts, ground
  • 1/2 cup granulated sugar

Preparation

Step 1

1.Preheat oven to 350°F. Combine flour, baking soda, baking powder, and salt in small bowl; set aside.
2.Beat butter, peanut butter, and brown sugar in large bowl with electric mixer on medium-high speed until creamy. Add pudding mix; beat 2 to 3 minutes, scraping down sides of bowl as needed. Add eggs, one at a time. Beat in vanilla. Gradually add flour mixture beating on low speed after each addition. Stir in peanuts.
3.Shape dough into 1-1/4-inch balls; roll in granulated sugar. Place 2-1/2 inches apart on ungreased cookie sheets. Press down on top of each with fork to make crisscross design.
4.Bake 10-12 minutes until bottoms are golden brown. Cool 1 minute on cookie sheets; transfer to wire racks. Cool completely. Store in air-tight container.
