The amount of these ingredients depends on the size of the fillets and personal preference. I usually grate 4 Tablespoons of cheese to a half cup of Panko. For the spicy seasoning, my preference is Olde Thompson Tex-Mex Chipotle Seasoning, however, Emeril’s Essence is also good and easy to make.

- Haddock Fillets, skinned
- Milk
- Salt
- Panko Crumbs
- Grated Parmesan Cheese
- Fresh Thyme
- Spicy Seasoning, optional
- Melted Butter

Preparation
Step 1
Preheat oven to 500F. Put milk with a little salt in a pie pan, roll fillets in it.
Dredge fillets in a mixture of Panko crumbs, grated Parmesan and fresh thyme leaves.
Line a baking sheet with foil and spray with Pam. Put fillets on foil, drizzle with a little melted butter, then top with seasoning.
Bake for 8 to 12 minutes, depending on the thickness of the fish.
