Ingredients
- 1/2 cup onion, diced
- 1/3 cup celery, diced
- 2 cloves garlic, chopped
- 1 tablespoon olive oil
- 1 (28-ounce) can diced tomatoes
- 2 cups vegetable stock
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon sugar
- 1 1/2 cups grated Cheddar cheese
- 1/4 cup half & half (or skim milk)

Preparation
Step 1
1 Heat olive oil in medium pot.
2 Add onion, celery, garlic, and cook for 3 to 4 minutes.
3 Add tomatoes, stock, salt, pepper, sugar.
4 Simmer for 8 to 10 minutes, stirring occasionally.
5 Remove from heat and stir in cheese and milk.
