Creamed Chicken on Potato Patties

Ingredients
- Chicken
- 2- 3 pound fryer chickens, cutup/ or 6lb stewing chicken, cutup
- 1 1/4 pounds chicken wings or backs
- 4 stalks celery, quartered
- 1 small carrot, peeled & quartered
- a small onion, cutup
- 2 sprigs parsley
- 2 tsp salt
- 1/4 tsp pepper
- Sauce
- 1 1/3 cups nonfat dry milk powder
- 3/4 cups flour
- 1 tsp salt
- 1/2 cup butter
- Potato Patties
- 2 cups cold mashed potatoes
- 1 beaten egg
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped celery
- 1/2 tsp salt
- 1/8 tsp pepper
- 2 tbsp butter, melted

Preparation
Step 1
In a large dutch oven, place chicken pieces, celery, carrot, onion & parsley.
sprinkle w/salt & pepper, add 2 1/2 qts water, bring to boil, reduce, cover & cook on low 1 hour, or until tender. remove chicken & set aside, remove veggies & discard. refrigerate broth, when chicken is cool, remove the meat from the bones, discard skin & bones, cube meat
In a medium bowl, combine milk powder, flour & salt, cut in butter till crumbly
In a sauce pan, combine the mixture & 1 1/3 cup water, cook & stir till thickened, cook & stir 1-2 minutes more. stir in cooked chicken & 1 cup frozen peas
In medium bowl, combine mashed potatoes, egg, onion, celery, salt & pepper, mix well, measure about 1/3 cup of the potato mixture into well oiled hamburger press, forming a uniform patty, makes 5, In a large skillet brown patties slowly in butter about 5 minutes or until brown
