Ingredients

  • 12 slices ham
  • 6 ounces cream cheese, softened
  • 2 tablespoons milk
  • 3 eggs
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons green pepper, diced
  • 1 green onion, chopped
  • 1/2 cup ham, chopped

Preparation

Step 1

Preheat oven to 375 degreese F. Grease muffin cups.

In a small mixing bowl, beat cream cheese and milk until smooth.
Add eggs, cheese, green pepper and onion; mix well.

Using 2 slices of ham for each muffin cup, lay the ham slices criss-crossing each other, ruffling the slices into the muffin cup & up the sides. Pour the egg mixture into the cups. Sprinkle chopped ham on top.

Bake for 18-22 minutes or until a knife comes out clean.
