Halibut with Citrus Fennel Relish

Ingredients
- 4 6 oz. halibut fillets
- 3/4 tsp salt, divided
- 3/4 tsp freshly ground black pepper, divided
- 2 tbsp extra virgin olive oil, divided
- 1 1/4 c shaved fennel bulbs
- 1 1/4 c coarsely chopped orange sections
- 1 tbsp chopped fennel fronds

Preparation
Step 1
Sprinkle fish with 1/2 tsp salt and 1/2 tsp pepper. Heat 1 tbsp oil in a large nonstick skillet over medium high heat. Add the fish to the pan and cook 4 minutes on each side or until the fish flakes when tested with a fork or until desired degree of doneness. Set aside and keep warm.
Combine fennel bulb, chopped orange sections, fennel fronds, remaining tbsp oil and remaining salt and pepper. Toss gently and serve with fish.
