Ingredients

  • 1 cup cranberries
  • 3 Tbsp. brown sugar
  • 1 1/2 tsp. cornstarch
  • 1 8 oz. can crushed pineapple in juice, undrained
  • 3/4 cup flour
  • 3/4 cup quick oats (uncooked)
  • 1/4 cup brown sugar
  • 1/4 tsp. ground ginger
  • 3 Tbsp. chilled margarine, cut in pieces
  • 1 egg white, lightly beaten
  • 3 Tbsp. pecans, chopped

Step 1

Combine first 4 ingredients in medium saucepan; stir well. Bring to a boil and cook 1 minute; cover, reduce heat and simmer 12 minutes or until cranberry skins pop and mixture thickens, set aside.

Combine flour and next 4 ingredients in bowl. Cut in margarine until resembles coarse meal. Reserve 1/2 cup oat mixture. Combine remaining oat mixture and egg white, stir well. Press into bottom of 8" square pan coated with spray. Bake at 350, 10 minutes.

Spread cranberry mixture over oat mixture. Combine reserve oat mixture and pecans; sprinkle over cranberry mixture. Bake at 350 for 27 minutes or until light brown. Cool and cut.
