Cumin Herb Rice Pilaf

Ingredients
- 1 1/2 tsp cumin seeds
- 1 large bunch scallions, white part thinly sliced (1/4 c) & enough greens finely chopped to measure 1/3 c
- 2 tbsp olive oil
- 1 1/4 c long grain rice
- 1 c reduced sodium chicken broth
- 3/4 c water
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1/3 c finely chopped fresh flat leaf parsley

Preparation
Step 1
Cook cumin seeds & white part of scallions in 1 tbsp oil in a 2 qt heavy saucepan over moderately low heat, stirring occasionally, until scallions are softened, 1-2 minutes minutes
Add rice & cook, stirring frequently, 1 minute, stir in broth, water, salt & pepper & bring to boil over high heat.
Cover pan, then reduce heat to low & cook until liquid is absorbed & rice is tender, about 15 minutes.
Remove pan from heat & let stand covered, 5 minutes
Fluff rice w/a fork & toss w/scallions greens, parsley & remaining tbsp oil
