Ingredients

  • 1 1/2 lb. pork tenderloin
  • 6 fresh peaches, or nectarines, cut into 1" slices
  • 1/2 cup pineapple juice
  • 2 Tbsp. dry sherry
  • 1 Tbsp. soy sauce
  • 3 Tbsp. packed brown sugar
  • 1 tsp. ginger root, minced

Step 1

Slice tenderloin in half lengthwise; then slice crosswards into 1" cubes. Thread pork and peaches onto skewers; place on broiler pan. Brush with combined pineapple juice, sherry, soy sauce, brown sugar and ginger root. Grill or broil 4-5" from heat, 8-10 minutes; turn once and baste often with juice. Serve with pilaf.
