Ingredients
- Rhubarb Sauce
- 3 cups rhubarb, cut into chunks
- 1 cup sugar
- 1/4 cup water
- Dry Ingredients
- 1 cup flour
- 2 Tbsp sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- Combine all the ingredients in a large mixing bowl.
- 2 Tbsp butter
- 1/2 cup milk
- 2 cups strawberries, sliced
- 3 Tbsp butter
- 2 Tbsp water
- 1 Tbsp cornstarch
- 1 tsp lemon juice
- Sweetened Whipped Cream OR Ice Cream

Step 1
For the Rhubarb Sauce:
Combine all the ingredients in a large skillet and cover; Cook until tender (about 25 minutes).
For the Cobbler:
Cut 2 Tbsp of butter into the large mixing bowl until the mixture resembles coarse crumbs. Add the milk and stir with a fork until the dough clings together; Set aside. Stir the strawberries and 3 Tbsp of butter into the cooked rhubarb. In a small bowl, combine the water, cornstarch, and lemon juice and mix until smooth. Stir the cornstarch mixture into the rhubarb-strawberry mixture; Bring the mixture to a simmer, stirring constantly. Drop the dough by rounded Tbsp onto the simmering fruit mixture; Cover and cook until the dough is thoroughly baked (about 15 minutes). Serve the cobbler warm with sweetened whipped cream or ice cream.
