TURKEY CUTLETS WITH CREAMY MUSHROOM AND WINE SAUCE

- 4 to 6 turkey cutlets
- 1/2 cup flour
- 1 tsp salt
- 1/4 tsp ground black pepper
- 1/4 tsp paprika
- 1 tbsp butter
- 1 tbsp olive oil
- 6-8 ounces sliced mushrooms
- 1 tbsp butter
- 1 1/2 cups chicken broth
- 1/2 cup dry white wine
- 1 1/2 tsp fresh chopped rosemary
- 1 tsp dried parsley flakes
- garlic and herb seasoning
- 2 tbsp flour blended with 2 tbsp cold water
- 1/2 - 3/4 cup cream

Step 1
1. Lay turkey cutlets between sheets of plastic and pound gently to thin slightly.
2. Combine the 1/2 cup flour, 1 tsp salt, 1/4 tsp pepper and the paprika.
3. Dredge cutlets to coat both sides.
4. In a large skillet over medium-high heat, sauté cutlets, a few at a time, in the 1 tbsp of oil and 1 tbsp butter.
5. Cook until browned and cooked through, about 2-3 minutes per side.
6. Remove cutlets to a warm plate and keep warm.
7. Add sliced mushrooms to the skillet along with remaining 1 tbsp buttter.
8. Cook until mushrooms are lightly browned.
9. Add the broth, wine, rosemary, parsley and a few shakes of garlic herb seasoning.
10. Increase heat to simmer the mixture briskly until reduced by about 1/3 to 1/2, lower heat to medium low.
11. Stir the flour and water mixture into the broth mixture.
12. Cook, stirring, until thickened.
13. Add about 1/2 cup of the cream, more if desired.
14. Pour sauce over cutlets and serve.
