Beef Roast w/Onions & Potatoes

Ingredients
- 1 large sweet onion (spanish) cut in half & then into thin slices
- 3 pound beef boneless bottom round roast
- 3 baking potatoes, cut into 1 1/2 -2 in cubes
- 2 cloves, garlic finely chopped
- 1 can (14 ounce) beef broth
- 1/2 package (2 ounce) onion soup mix (1 envelope)
- 1/4 cup gold medal all purpose flour

Step 1
Place onion in 5-6qt slow cooker, place beef on onion, place potatoes & garlic around beef, stir together 1 1/4 cups of beef broth & dry soup mix in small bowl, pour over beef
cover & cook on low heat 9-10 hrs, until tender
remove beef & veggies & keep warm
mix remaining 1/2 cup broth & flour, gradually stir into juices in slow cooker, cover & cook on high heat about 15 minutes, stirring occasionally, until sauce has thickened, serve over beef
