TURKEY CUTLETS WITH SWISS CHEESE 1 Picture

Ingredients

  • 1 lb. turkey breast tenderloin (cutlets)
  • 1 cup chicken broth
  • 1/4 cup of cream or half-and-half
  • 2 tbsp flour
  • 1/8 tsp pepper
  • 2 ounces Swiss cheese
  • 1/2 cup green bell peppers, cut into thin strips
  • 2 slices smoked ham, cut into thin strips

Step 1

1. In a large skillet, over medium heat, bring turkey and chicken broth to a boil.

2. Cover and simmer 10 minutes or until no longer pink in center.

3. Remove turkey, set aside and strain broth if desired.

4. In a small bowl, mix cream, flour and pepper thoroughly then stir mixture into broth.

5. Stirring over medium-high heat, bring to a boil and boil 3 minutes.

6. Add cheese and whisk until cheese melts.

7. Add green pepper, ham and cooked turkey to sauce.

8. Reduce heat to low, cover and simmer 5 - 10 minutes until peppers are tender-crisp.

9. Serve sauce over turkey.
