Ingredients
- For rice:
- 1 1/4 c. long grain rice
- 1 1/2 to 2 tsp. tomato bouillon
- Chopped onions, carrots, corn if desired
- 2 1/2 c. water
- Olive oil
- For entree:
- 1 lime, sliced
- 1 lb. chopped steak or chicken
- 5-6 Roma tomatoes, chopped
- 1 onion, chopped
- 2 jalapenos, chopped and de-seeded
- Other veggies you like, chopped

Preparation
Step 1
Rice:
1. Coat bottom of saucepan with oil; heat to medium high.
2. Add rice; cook, stirring, until while
3. Add water and bouillon and veggies.
4. Bring to boil.
5. Cover and simmer 15 minutes, until water's gone.
Meat:
1. Cook meat in small amount of oil, add salt and pepper to taste.
2. Add veggies; stir fry with salt and pepper.
3. When cooked, add jalapenos.
4. Cook on medium / medium high until water boils off (beer added will help flavor and cook meat)
5. Top with cilantro, stir, cook 1 minute.
6. Serve with rice and tortillas and lime.
