Ingredients
- 1 lb. Large white beans
- 2 t ground cumin
- 6 – 8 C Chicken broth
- 1 1/2 t oregano
- 2 Garlic cloves, minced
- 1/4 t ground clove
- 1 T Vegetable oil
- 1/4 t cayenne pepper
- 2 Cans chopped green chili
- 4 C diced, cooked chicken
- 2 Medium onions, chopped

Step 1
1. Combine beans, broth, garlic and half of the onions in a large stock pot. Bring to boil, reduce heat and simmer until beans are soft. (about 3 hours) Add more broth if needed.
2. Sauté remaining onions in oil until tender. Add chilies and seasonings and mix thoroughly. Add to bean mixture. Add chicken and simmer one hour. Serve topped with grated Monterey Jack cheese, salsa, and sour cream.
