  • CUPCAKES:
  • 2 1/2 cups flour
  • 2 cups sugar
  • 5 tablespoons cocoa
  • dash of salt
  • 2 eggs
  • 1 cup oil
  • 1 teaspoon vanilla
  • 1 cup buttermilk
  • 1 cup hot water
  • 2 teaspoons baking soda
  • FILLING:
  • 1/4 cup butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • 2 teaspoons cream
  • FROSTING (Optional):
  • 1 stick butter, softened
  • 4 tablespoons cocoa
  • 4 cups powdered sugar
  • 1/4 cup cream
  • 1 teaspoon vanilla

Preparation

Step 1

Preheat oven to 350 degrees. Place paper liners in regular sized muffin tins.
Mix flour, sugar, cocoa and salt. Add eggs, oil, vanilla and buttermilk. Beat.

Dissolve baking soda in hot water. Stir into batter. Spoon into prepared pans. Bake for 15-20 minutes. Cool before filling.

For filling, cream butter and sugar. Stir in vanilla. Add cream gradually until filling is of desired consistency. Use decorator bag and tip. Fill bag with filling. Insert tip into cupcake and squeeze to fill.

For frosting, combine ingredients & beat until smooth. If frosting is too thick, add more cream a teaspoon at a time until desired consistency.
