Ingredients
- ICING:
- 1 cup rolled oats (oatmeal)
- 1 1/2 cups boiling water
- 1/2 cup shortening
- 1 1/2 cups sugar
- 2 eggs
- 1 cup flour
- 1/2 cup cocoa
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla
- 3/4 stick of butter
- 1 cup brown sugar
- 1/2 cup cream or milk
- 1 tsp vanilla
- 1 cup coconut
- 1/2 cup of nuts of your choice

Mix oatmeal and boiling water together and let cool. Cream shortening with sugar and eggs. Add the oatmeal mixture along with the flour, cocoa, baking soda, salt and vanilla. Beat until smooth. Bake in a 9x12 greased pan at 350 for 35 minutes. For icing, boil together the 3/4 stick of butter and the cup of brown sugar along with the 1/2 cup cream or milk. Boil for 10 min. Add 1 tsp vanilla and the coconut. Spread on cake as soon as it comes out of the oven. Put back in the over about 5 minutes.
