Ingredients
- 1 cup all purpose flour
- 2 broiler/fryer chickens, cut up
- 2 tbsp vegetable oil
- 3 celery stalks, cut into 1in pieces
- 1/4 cup parsley
- 2 tsp salt
- 1 tsp garlic powder
- 1 tsp thyme
- 1/2 tsp pepper
- 8-12 cups water
- 3 medium carrots, cut into 1in pieces
- Dumplings
- 2 cups all purpose flour
- 2 tsp baking powder
- 2 eggs, beaten
- Gravy
- 1/4 cup all purpose flour
- 1/2 cup water

Preparation
Step 1
Place flour in bowl & add chicken pieces, coat well, in a large skillet brown chicken in oil, drain
Place in 8qt dutch oven, add celery, carrots, parsley & seasoning, add enough water to cover chicken, bring to boil, reduce heat, cover & simmer for 45-50 minutes.
Remove 1 cup broth to use for dumplings, cool, then add flour, baking powder & eggs. mix well to form a stiff batter, drop by tbsp into simmering broth, cover & simmer for 15-20 minutes, remove chicken & dumplings to a serving dish
for gravy remove 4 cups broth & vegetables to a large saucepan, bring to boil, combine flour & water, mix well, stir in vegetable mixture, cook over medium heat, stirring constantly until thickened. pour over chicken & dumplings
