Ingredients

  • 1 lb hot Italian sausage cut into 1 inch pieces
  • 2 tbsp olive oil, divided
  • 1 cup chopped onion
  • 2 garlic cloves, minced
  • 3 (16 oz) cans cannellini or great northern beans, undrained
  • 2 (14 oz) cans chicken broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 2 to 3 tsp Italian seasoning
  • 10 oz pkg frozen chopped spinach, thawed & drained

Preparation

Step 1

In a 4 qt dutch oven cook sausage in 1 tbsp hot oil over medium heat until browned. remove sausage from skillet & set aside, drain fat from skillet
Add remaining 1 tbsp oil to skillet, add onion & garlic, cook, stirring until tender, stir in beans, broth, tomatoes & Italian seasoning, bring to boil.
Stir in spinach & cooked sausage heat through.
