Ingredients
- GLAZE:
- 6 tblsp unsalted butter, melted
- 1 3/4 cup graham cracker crumbs
- 3/4 cup chopped pecans
- 1 tblsp sugar
- 3 (8oz) pkg cream cheese
- 1/2 cup sugar
- 5 large eggs
- 1 (8oz) can crushed pineapple
- 1 cup cream of coconut
- 1 cup sour cream
- 1/3 cup light rum
- 4 tsp coconut extract
- 1 tblp cornstarch
- 1 tblsp water
- 1/4 cup sugar
- 2 tblsp lemon juice
- 1 undrained can (8oz) crushed pineapple

Step 1
Stir together first 4 ingredients and press into bottom and 1 1/2 inches up the sides of a lightly greased 10" springform pan. Beat softened cream cheese and 1/2 cup sugar at medium speed until fluffy. Add eggs, 1 at a time beating well after each addition. Add 1 can drained pineapple and next 4 ingredients, beat in until blended. Pour into crust. Bake at 325 for 1 hour and 15 min. or until center is almost set. cool on wire rack. Spread glaze over top of cheesecake. Cover and chill at least 8 hours.
