Ingredients

  • CARAMEL SAUCE:
  • 2 Tbsp. unsalted butter
  • 1 1/2 Tbsp. dark brown sugar
  • 1 1/2 Tbsp. sugar
  • 2 Tbsp. light corn syrup
  • 2 tsp. water
  • 1/4 tsp. salt
  • 2 Tbsp. heavy cream
  • 1/2 tsp. vanilla extract
  • APPLE RELISH:
  • 2 small Granny Smith apples, peeled and diced (about 1 1/2 cups)
  • 1/4 cup golden raisins2 tsp. sugar
  • 1 Tbsp. dark raisins
  • 2 1/2 tsp. cinnamon
  • 1/2 cup sugar
  • 2 Tbsp. caramel sauce
  • "PIZZA" CRUST:
  • 1 17.3-oz. box frozen puff pastry dough, defrosted 20-30 minutes
  • 2 tsp. sugar
  • CINNAMON WHIPPED CREAM:
  • 1 cup whipping cream
  • 2 Tbsp. powdered sugar
  • 2 tsp. cinnamon
  • GARNISH:
  • 4 small scoops vanilla ice cream
  • 4 mint sprigs

Step 1

CARAMEL SAUCE: In a small saucepan, melt the butter. Add the brown sugar, sugar, corn syrup, water and salt. Bring to a boil and let boil for 5 minutes, stirring occasionally. Remove from heat and whisk in the heavy cream and vanilla. Sauce will thicken as it cools.

APPLE RELISH: In a bowl, toss together the apples, golden and dark raisins, cinnamon, sugar and caramel sauce.

THE "PIZZA": Preheat oven to 400. Lay out both sheets of puff pastry on a cutting board. In each sheet, cut 2 circles, about 5" each. Line a baking sheet with wax or parchment paper. Top with the pastry rounds. Divide the apple relish equally among the pastry rounds, heaping it in the center. Sprinkle the crusts with sugar. Bake until the pastry rises and turns golden, about 12 minutes.

CINNAMON WHIPPED CREAM: While the "pizza" are cooking, combine the cream, sugar and cinnamon in a bowl. Whip, by hand or with hand-held mixer, until soft peaks form.

TO SERVE: Place a warm or room-temperature (not hot) "pizza" in center of each of 4 plates. Top each with a small scoop of ice cream and a dollop of cinnamon whipped cream. Garnish with a mint sprig.
