Ingredients
- 2 lbs red potatoes
- 4 slices thick bacon
- 6 tbsp grainy dijon mustard
- 2 tbsp EVOO (extra virgin olive oil)
- 3 shallots
- 3 tbsp white wine vinegar
- handful of parsley

Step 1
Boil water w/potatoes (salt)
in another pan add 2 tbsp EVOO (twice around the pan) add bacon, cook till crisp, add shallots, lower heat, cook 7 minutes or until tender, add vinegar, whisk in dijon mustard, add potatoes & parsley
