Ingredients
- l lge garlic clove
- 1 T chopped red onion
- 1 T lime juice
- 2 tsp. chili powder
- 2 tsp. salt
- 1 tsp ground cumin
- 2 T olive oil
- 1 1/2 lb flank steak
- 10 lime wedges
- 3 1/2 oz. shredded Monterey Jack Cheese
- 2 T chopped cilantro
- 12 6" warmed corn tortillas

Step 1
In processor, pulse garlic with onion, lime juice, chili powder, salt & cumin. With machine on slowly drizzle in olive oil to form wet paste. Rub paste all over steak.
Light grill. Grill steak over med-hi fire for 10 min., turning once, til thermometer registers 125-130*. Transfer steak to cutting & let rest 5 min.
Cut steak across grain into 1/4" slices. Arrange on platter. Squeeze 2 lime wedges over steak slices, then top with shredded cheese & cilantro. Serve with warm corn tortillas and remaining lime wedges.
