Ingredients
- Dressing:
- 3 cups thinly sliced cucumbers
- 1/2 t. salt
- 1/4 t. sugar
- 2 t. white wine vinegar
- 1/2 t. grated fresh ginger
- 1 t. soy sauce
- 1/4 t. sugar
- 1 T. white wine vinegar
- 2 T. vegetable oil
- 1 T. chopped chives
- 1 T. chopped red bell pepper
- 1/8 t. red chili pepper flakes
- salt and pepper to taste

Step 1
Put cucubmers in a bowl with salt, sugar and vinegar. Toss and let stand 30 minutes. Drain. Chill 30 minutes and drain again. Combine dressing ingredients. Toss with drained cucumbers. Season with salt and pepper.
