Roast Beef and Fontina Panini

Ingredients
- 2 T. butter
- 1 small onion, thinly sliced
- 2 T. whole-grain mustard
- 1/2 (1 pound) loaf ciabatta bread, split lenthwise
- 1/3 pound thinly sliced deli roast beef
- 4 slices bacon, cooked
- 3/4 cup shredded fontina cheese

Preparation
Step 1
1. Preheat panini grill. In a medium skillet, melt butter over medium heat. Add onion, and cook for 10 to 12 minutes, stirring frequently, or until very tender. Increase heat to medium-high, and cook, stirring constantly, until onions are caramel colored. Set aside.
2. Spread mustard evenly over cut sides of bread. Top bottom half of loaf with roast beef, bacon, caramelized onions, and shredded cheese. Cover with top half of loaf.
3. Place sandwiches on panini grill. Close lid, and grill for 6 to 10 minutes or until bread is toasted and cheese is melted. Cut in half to serve. Serve immediately.
