Ingredients
- 3 cups oatmeal
- 3/4 cup brown sugar
- 2 tsp. cinnamon
- 1 tsp. salt
- 2 tsp. baking powder
- 2 tsp. vanilla
- 1 cup whole or skim milk
- 2 eggs (1/2 cup eggbeaters)
- 2 mashed bananas
- 3/4 cup coarsely chopped walnuts

Step 1
Preheat oven to 350 degrees.
In large mixing bowl combine all dry ingredients, set aside.
In another bowl, combine vanilla, milk, eggs, and mashed bananas. Mix in sugar.
Combine wet ingredients into dry ingredients and mix thoroughly. Fold in walnuts. Let combined mixture stand for 30 minutes.
Grease a large 6 piece muffin pan. Fill evenly with oatmeal mixture. Bake for 35 minutes or until lightly brown around edges.
