Ingredients

  • 1/3 cup all-purpose flour
  • 1 1/2 teaspoons poultry seasoning or paprika
  • 1 1/2 teaspoons dried basil or marjoram
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black or white pepper
  • 2 1/2 -3 pounds meaty chicken pieces (breasts halves, thighs, and drumsticks)

Step 1

1. In a plastic bag combine flour, and all spices. Shake the bag. Add chicken pieces, few at a time, shaking to coat. (Place chicken in freezer for 5 minutes before coating, run chicken under cold water and then place in bag. Helps coating stick to chicken).
2. Add canola or vegetable oil to 12 –inch skillet to a depth of 1/4 or 1/2 –inches. Heat over medium-high heat. (375 degrees) Until hot enough to sizzle a drop of water. Reduce heat to medium (275 degrees) Add chicken to skillet. (Do not over crowd chicken. If necessary cook in two batches.)
3. Cook on medium heat for 15 minutes. Uncovered turning to brown evenly. Reduce heat to medium-low (170 degrees) cover and continue to cook for 15 minutes. Uncover and cook for another 5-10 minutes until chicken reaches 170 degrees for chicken breast and 180 for thighs, and drumsticks. Drain on paper towels.
