Ingredients

  • 1/2

    cup +2 tbsp flour

  • 1/2

    cup protein powder

  • 1/2

    cup splenda

  • 1

    tsp baking powder

  • 1

    tsp cinnamon

  • 1 1/2

    cups buttermilk

  • 1

    tbsp butter, melted

  • 2

    eggs, lightly beaten

Directions

In med bowl, combine dry ingredients. In small bowl, whisk together buttermilk, melted butter and eggs. Stir into dry ingredients using a spoon or rubber spatula just until all flour is moistened. Do not overmix. On med heat, spray skillet with nonstick spray. Pour 1/4 cup batter and spread into 4-inch circle for each pancake. Cook for 3-4 min on first side until underside browns. Flip pancake and cook on second side 2-3 min. Serve with hot syrup.
