Summer Cod or Halibut

Ingredients

  • 2 lemons
  • 1 med. zucchini, sliced
  • 1 med. summer squash, sliced
  • 4 (5-oz.) boneless, skinless cod fillets
  • 1 pt. cherry tomatoes, halved
  • 4 Tbsp. margarine or butter
  • 1 bunch fresh basil leaves
  • 1 c. frozen brown rice, warmed

Preparation

Step 1


Preheat oven to 400 degrees.
From 1 lemon, squeeze 4 tsp. juice. Slice remaining lemon.

On work surface, place 4 (12-inch square) pieces aluminium foil. Divide zucchini, squash, cod fillets, cherry tomatoes, and lemon slices among foil pieces. Top each with 1 Tbsp. margarine, 1 tsp. lemon juice, 4 to 5 basil leaves, and 1/4 tsp. salt; crimp foil edges tightly to seal packets and transfer to jelly-roll pan.

Bake 20 minutes or until fish is cooked through. Serve packets with rice.
