Nutty Pasta with Shrimp

Ingredients
- 2 tbsp fresh chopped cilantro (plus more for garnish)
- 2 tbsp grated fresh ginger
- 6 tbsp low sodium soy sauce
- 4 tbsp peanut butter
- 2 tsp sugar
- 2 tsp rice vinegar
- 1/2 tsp hot sauce
- 2 garlic cloves
- 1 tsp sesame oil
- 8 ounces shrimp, peeled and deveined
- 1 cup onion, sliced
- 1 red bell pepper, cut into 1/4 inch strips
- 1 to 2 cups spinach
- 2 cups hot cooked rigatoni (1 1/4 cup uncooked)

Step 1
1. Combine 1st 8 ingredients in a medium bowl and whisk well.
2. Heat oil in a large non stick skillet over medium high heat. Add shrimp and saute for 3 minutes or until done.
Remove shrimp from pan. Add onion and bell pepper to pan. Saute 3 minutes. Add soy sauce mixture, shrimp, and spinach. Reduce heat to medium. Cook 2 minutes or until spinach wilts. Serve shrimp mixture over pasta.
