Ingredients

  • 1 Onion
  • 2 Garlic cloves
  • 1 tsp black peppercorns
  • 1 tsp cumin seeds
  • 1 tsp white mustard seeds
  • 2 tsp paprika
  • 1 tsp chilli powder or cayanne pepper
  • 1 tsp dried oregano
  • 2 tsp dried thyme
  • 1 tsp salt

Step 1

Finly chop the onion. Press the garlic firmly with the flat side of a wide-bladed knife to release the skin, then peel and chop it finely. Set aside until ready to use.

Dry fry the peppercorns, cumin and mustard seeds over a medium heat to release the falvors, but do not allow them to burn.

Grind the dry fried spices to a fine powder, then add the paprika, chilli powder or cyanne, oregano, thyme and salt. Gind again to achieve a uniformly fine mixture.

If the mix is to be used immediately, add the spices to the finly chopped garlic and onion in a blender or food processor and process until well combined. Alternatively, store the dry mixture in an airtight container and add the garlic and onion only when ready ti use the spice mix.
