Ingredients

  • 15 potatoes, peeled
  • 6 large slices green bacon
  • 2 tsp baking powder
  • 2/3 cup cold water
  • salt and pepper

Preparation

Step 1

Preheat oven to 400.
Boil and mash 3 potatoes to make 1 1/2 cups.
Place half of green bacon in 9x13 inch pan pan and bake until cooked and crisp at edges.
Meanwhile:
Grate remaining potatoes and place in clean dishcloth. Squeeze out as much liquid as possible.
Should have about 3 cups of grated potatoes.

Combine cooked bacon and rendered fat with potatoes, baking powder and water, salt and pepper. Stir and place in same pan.

Top with remaining bacon and bake about 1 hour until crisp.

Serve with lots of ketchup!
