Ingredients

  • 3/4 C bottled salsa
  • 1 1/2 tsp. ground cumin
  • 1 (14 1/2oz.) can diced tomato (no salt added)
  • 1 (8oz.) can no salt added tomato sauce
  • cooking spray
  • 6 pre-cooked lasagna noodles
  • 1 C frozen whole kernel corn thawed
  • 1 (15oz.) can black beans (rinsed and drained)
  • 2 C (8oz.) four cheese mexican blend

Preparation

Step 1

Preheat oven to 450
Combine first 4 ingredients
Spread 2/3 C sauce in bottom of 8in. square baking dish coated with cooking spray
Arrange 2 noodles over sauce
Top with 1/2 C corn and 1/2 of beans
Sprinkle with 1/2 C cheese top with 2/3 C sauce
Repeat layers once and top with remaining 2 noodles
Spread remaining sauce over noodles
Top with 1 C cheese
Cover bake at 450 for 30 mins. or until sauce is bubbly
Let stand for 15 mins.
