Neiman Marcus Popovers with Strawberry Butter

Light & Airy Popovers that melt in your mouth. Don't make the mistake of thinking Popovers have to be overwhelming with flavor, a nice neutral balanced Popover lends itself to a beautiful whipped strawberry butter that makes the flavor pop (pun intended!)

Ingredients
- PopOvers:
- 6 Large Eggs (Room Temperature)
- 3 1/2 Cups Milk (Warmed)
- 4 Cups all purpose flour (Sifted)
- 1 1/2 tsp of salt
- 1 tsp of baking powder
- Strawberry Butter:
- 1 Pound unsalted butter, softened
- 1 1/4 cups Strawberry preserves

You will need a popover pan, teflon coated
Table Mixer
Preheat oven to 450 F. Microwave milk on high for 2 minutes, or until warm to the touch. Sift the flour, salt, and baking powder together in a large mixing bowl.
Beat in the eggs at medium speed for about 3 minutes, until foamy and pale in color. Stir in warm milk at low speed. Gradually add the flour mixture to the beaten eggs at low speed. Beat for 2 minutes on medium speed. Let the batter rest for one hour at room temperature.
Spray the popover tin heavily with non-stick spray. Adjust you oven racks to give plenty of room above the popover tin to rise. (The first batch I made went right through the grate above). Fill cups to the top with batter. Place popover tin on cookie sheet. Bake 15 minutes at 450 F, then reduce heat to 375 F and bake for 30-35 minutes more. Popovers should be a deep golden brown on the outside and light and airy on the inside. Serve hot with whipped starwberry butter.
Strawberry Butter:
Make while popovers are in the oven. Beat trhe butter until light and fluffy. Add the preserves and beat until well combined (you will be thankful you have a table mixer here). To serve, spoon or pipe into one-once ramekins or bread butter plates and enjoy.
