Ingredients
- MEAT SAUCE:
- 1 box Manicotti
- 15 oz. ricotta cheese
- 2 Tbsp. cottage cheese
- 3/4 cup mozzarella cheese
- 1/2 cup parmesan cheese
- 2 eggs
- 3 #2 cans herb tomato sauce
- 1 lb. mushrooms, fresh sliced
- 1/3 medium diced green pepper
- 1/2 medium diced onion
- 2 Tbsp. butter
- 1 1/2 lbs. ground beef
- Garlic powder to taste
- 1 1/2 Tbsp. parsley
- Sage, very little
- 1 basil leaf
- 1/2 tsp. oregano

Preparation
Step 1
Drop 1 Tbsp. olive oil or vegetable oil into 3 quarts boiling salted water. Drop shells in very gently. Boil 8 minutes. Mix other ingredients. Stuff shells very carefully; put in grease casserole dish.
MEAT SAUCE:
Saute onion and pepper. Brown meat. Add all in large sauce pan; simmer 1 hour. Pour 3/4 of sauce over stuffed shells. Bake at 350 for 1 hour. Pour other sauce over.
