Almond Biscotti

A holiday favorite that is easy to make. You can substitue hazelnuts for the almonds.

- 2 cups flour
- 1/4 tsp. salt
- 1 tsp. baking powder
- 1 tsp. vanilla
- 1/2 tsp. almond extract
- 3 eggs
- 1 cup granular sugar
- 1 cup almonds

Step 1
Preheat oven to 325 degrees.
In large electric mixing bowl, combine vanilla, almond extract, eggs, and sugar. Mix thoroughly.
In another bowl whisk together flour, salt, and baking powder. Combine well into wet ingredients. Fold in almonds.
On ungreased cookie sheet, form two equal sized bars with dough. Dough will be extremely sticky, so run hands under cold water prior to handling dough.
Bake for 35-40 minutes in oven until golden brown. Remove from oven and reduce oven temperature to 300 degrees.
Once cookie rolls are cool enough to handle, place on cutting board and slice 1/2 inch on angle with sharp knife, a knife that will slice through the nuts (this will help ensure the cookie stays together).
Place cookies side down on cookie sheet and put back in oven for 10 minutes. Remove from oven, flip cookies over and bake again for another 8 minutes. After this second round, turn oven off, open oven door and keep it ajar, and let cookies "dry out" for about 10-15 minutes.
