Ingredients

  • 1 tsp. canola oil
  • 2 corn tortillas (6" diameter)
  • 1/4 avocado, sliced
  • 1 ounce thinly sliced cooked skinless chicken breast
  • 1 leaf lettuce, cut into shreds
  • 2 tsp. store-bought salsa
  • 2 tsp. minced fresh cilantro

Step 1

Heat the oil in a nonstick skillet over medium-high heat. Cook the tortillas for about 1 minute on each side or until lightly browned (they will become crisp as they cool).
Transfer the tortillas to a work surface. Place the avocado on 1 tortilla. Top with the chicken, lettuce, salsa, cilantro and remaining tortilla. With a serrated knife, cut into 2 half-moons.
