- Directions:
- 1 pint fresh blackberries, chopped
- 1/2 cup sherry vinegar
- 1 tablespoon minced shallots
- 1 teaspoon minced garlic
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh mint, chopped
- 1 tablespoon fresh tarragon, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon fresh-ground black pepper
- 3/4 cup extra-virgin olive oil
- ●Add vinegar, shallots, garlic, honey, mustard, herbs, salt and pepper in a mixing bowl. Stir until salt is dissolved and ingredients are incorporated.
- ●Slowly add the olive oil while mixing continuously.
- ●Fold in the blackberries and adjust seasonings.
