Ingredients
- 2 medium zucchini, cut into 1/4-inch slices
- 1-1/4 cups sliced fresh mushrooms
- 1/2 cup chopped green onions
- 1 tsp. minced garlic
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. olive oil
- 1 medium tomato, chopped
- 2 Tbsp. shredded Parmesan cheese

Step 1
In a large skillet, saute the zucchini, mushrooms, onions, garlic, alt and pepper in oil for 6-8 minutes or until tender. Remove from the heat; stir in tomato. Sprinkle with Parmesan cheese.
