Ingredients
- 1/2 cup drained peach halves
- 1/3 cup lowfat cottage cheese
- 1 teaspoon confectioners' sugar
- 1 9" refridgerated prepared crepe
- 1 1/2 teaspoons apricot preserves

Step 1
1. In small food processor, mixer or blender, combine peaches, cottage cheese and confectioners' sugar; process until smooth.
2. Brush crepe with fruit spread. Spread peach mixture to within 1" of edge of crepe; fold or roll crepe to enclose filling.
