Grilled Cherry Tomato Turkey Burgers

Ingredients
- 2 T Dijion mustard
- 2 T whole wheat panko
- 2 T fat-free milk
- 2 cloves garlic, minced
- 1 shallot, finely chopped (2 T)
- 1 T snipped fresh basil
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 lb ground turkey breast
- 1 pint assorted cherry tomatoes or baby heirloom tomatoes
- 2 4-inch square focaccia bread or ciabatta rolls, toasted
- 1 tsp lemon juice

Preparation
Step 1
1. Soak four 8-12 inch skewers in water for 30 minutes.
2. In a medium bowl combine 1 T of the mustard, panko, milk, garlic, shallot, basil and 1/4 tsp each of salt and pepper. Add ground turkey; mix well. Form into 4 patties.
3. Thread cherry tomatoes on skewers. Brush lightly with olive oil.
4. Grill burgers, adding tomatoes the last 5 minutes of grilling, turning to cook evenly.
5. Spread the cut sides of the bread with the remaining Dijion mustard. Place burgers on top, remove tomatoes from skewers and pile on burgers. Drizzle with lemon juice, the remaining salt and pepper and additional basil.
