  • 1/2 cup granulated sugar
  • 3 Tbsp shortening (butter may be used but the cupcakes won't rise as high)
  • 2 egg whites
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 cup sifted flour
  • 1-1/2 tsp baking powder
  • 1/8 tsp salt
  • 1 Tbsp soft butter
  • 3 Tbsp powdered sugar
  • 1 tsp cinnamon

Step 1

1. Preheat oven to 375 degrees F. Line a cupcake pan with 10 paper liners and set aside.
2. Cream together the sugar and shortening until fluffy. Add the egg whites and beat well. Add the vanilla extract and milk.
3. In a separate bowl, sift together the flour, baking powder, and salt; gradually add to the creamed mixture and beat until smooth. Pour into the cupcake cups and bake at 375 degrees F for 20-22 minutes.
4. Remove from the oven and spread the cupcake tops with butter while still hot. Then sift the powdered sugar mixed with the cinnamon over the cupcakes. Serve warm.
