Ingredients
- 1/2 onion, chopped
- 1/8 cup olive oil
- 1 carrot, diced
- 1 celery stock, diced
- 1 garlic clove, minced
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1 bay leaf
- 1/2 can crushed tomatoes
- 1 cup dry lentils
- 4 cups water
- 1/2 vegetable of choice
- 1 tbsp lemon juice

Step 1
1. In a large pot, heat oil over medium heat. Add onions, carrots and celery; cook and stir until tender. Stir in garlic, bay leaf, oregano, and basil; cook for 2 mins.
2. Stir in lentils, and add water and tomatoes. Bring to a boil. Reduce heat, and simmer for at least 1 hour. When ready to serve stir in vegetable and cook until tender. Stir in lemon juice and season to taste with salt and pepper.
